Who wouldn’t love to tuck into these Slender Wonder Tuna Fishcakes? Deliciously tasty, they’re the perfect summer treat and, even better, you probably already have most of the ingredients in the cupboard. Enjoy!

Please note these portions are based on Simeon B, adjust the portions according to the phase you are on.


  • 100g tuna in brine (drained)
  • 20g diced onion
  • 80g cauliflower rice
  • 2x crackerbread
  • 1 tsp lemon juice
  • lemon pepper
  • 1 tsp balsamic vinegar


  1. Add tuna and onion into a bowl
  2. Add cooked cauliflower rice to the bowl
  3. Crush crackerbread finely and add to the mixture
  4. Add lemon juice, lemon pepper and balsamic vinegar
  5. Once the ingredients are combined divide the mixture and press into individual circular fishcakes
  6. Place the fishcakes into in an air fryer for 15 minutes at 180ºC
  7. If you do not have an air fryer, you can cook these delicious fishcakes in an oven at 180ºC / gas mark 4 for 15 minutes
  8. Serve and enjoy!
