Who says you can’t enjoy delicious apple muffins without sacrificing your diet? Swap the high street calorie-bomb for a homemade treat and relish the fruits of your labours. Healthy, quick and tasty – you can’t go wrong with these muffins!
Please note: these portions are based on Simeon B, adjust the portions according to the phase you are on.
Ingredients:
- 1x apple
- 2x eggs
- Pinch of salt
- 2 Tsp sweetener
- ½ Tsp cinnamon
- 2x Crackerbread (crushed)
Method:
- Peel and core one apple
- Grate the apple and set aside for later
- Place one egg and the egg white from another into a bowl
- Add salt, sweetener and cinnamon to the egg mixture
- Add the crushed Crackerbread to the mixture
- Now add in the grated apple
- Mix ingredients until combined
- Place mixture in a muffin tin
- Bake at 180ºC / gas mark 4 for 15 minutes
- Serve and enjoy your delicious apple muffins!
