Who says you can’t enjoy delicious apple muffins without sacrificing your diet? Swap the high street calorie-bomb for a homemade treat and relish the fruits of your labours. Healthy, quick and tasty – you can’t go wrong with these muffins!

Please note: these portions are based on Simeon B, adjust the portions according to the phase you are on.

Ingredients:

  • 1x apple
  • 2x eggs
  • Pinch of salt
  • 2 Tsp sweetener
  • ½ Tsp cinnamon
  • 2x Crackerbread (crushed)

Method:

  1. Peel and core one apple
  2. Grate the apple and set aside for later
  3. Place one egg and the egg white from another into a bowl
  4. Add salt, sweetener and cinnamon to the egg mixture
  5. Add the crushed Crackerbread to the mixture
  6. Now add in the grated apple
  7. Mix ingredients until combined 
  8. Place mixture in a muffin tin
  9. Bake at 180ºC / gas mark 4 for 15 minutes
  10. Serve and enjoy your delicious apple muffins!
